Sometimes all you need is cheese wrapped in bread. And some spinach to balance it out? This little treat is dedicated to slow Saturday mornings filled with carbs and naps. Enjoy!
What goes in:
500 grams of Spinach (one of those plastic boxes you see at the store)
2 cups Ricotta
1 Egg Yolk
1/3 Cup Shredded Parmesan
1 Small Yellow Onion
1 Tbsp. Earth Delight
1 Package of Puff Pastry (I used the 8 piece jumbo flaky biscuit package)
Seasoning: Black Pepper
What you do:
Preheat the oven to 350. Chop your onion into small pieces and cook with butter on medium heat until onion softens. In another pan add spinach with a splash of water on low heat and cover with a lid. The spinach should wilt pretty quickly. Drain all of the excess water out of the spinach by squeezing it in a clean towel or placing it in a strainer and pushing against it with a large spatula.
Once the onions have softened and the excess liquid is removed from the spinach, combine in a bowl and add the cheeses, egg yolk, and black pepper (and whatever other seasonings you want). Mix everything together evenly. If you are using the biscuit dough, roll them out enough to put a generous amount of the spinach and cheese mix in the middle. Fold the edges of the dough together so they hold in the mix. Place evenly on a baking sheet and cook for 20 minutes!
