Never thought I would get excited about buying myself a blender, but here I am, really stoked. This means fresh, homemade sauces for EVERYTHING! This meal is super easy, you are pretty much just making the sauce since the tortellini just needs to sit in water for a few minutes. So, here’s a lazy meal brought to you by my new blender!
What goes in:
2 Packages of Spinach Tortellini (found at Trader Joe’s)
2 Red Bell Peppers
2 Roma Tomatoes
1 Yellow Onion
1 12 oz. Bag of Spinach
1 tbsp. Earth Balance Dairy Free Butter (or reg. butter)
Seasoning: Salt, Black Pepper, Onion Powder, Paprika, Oregano, Basil, Red Pepper Flakes Nutritional Yeast
What you do:
Put the oven on HIGH broil. Chop your bell peppers in halves and place on a baking sheet in the oven for 10-15 minutes, skin side up. The peppers are done when the skin is mostly blackened. Once they are finished cooking, put peppers in a Tupperware with the lid on so they can steam up a bit. This can also be done in a closed Ziploc bag. Leave them in there for 5-10 minutes.
On medium heat, melt butter and cook chopped onion, chopped jalapeno, 1/2 the bag of spinach, chopped tomatoes, and garlic on a skillet with the lid on. The amount of garlic is up to you, I used about two spoonfuls of minced garlic. While this is cooking you can take the bell peppers out of their container and peel the outer skin off. It should come off really easily. Chop the peppers up after and put them in the blender. Back to the stove- the spinach should be wilted by now and the onions translucent. Put this entire mixture into the blender as well and blend. I poured my seasoning right into the blender. I used a quite a bit of seasoning, besides the nutritional yeast (this was just added on top before eating). You will want to taste test to decide how much seasoning you want. Add a few splashes of almond milk and blend until sauce is at the consistency you prefer.
Tortellini just gets poured into boiling water for a few minutes. Follow the directions on the package. Once it is drained add the other 1/2 of the spinach bag and pour the sauce over while mixing it so everything is covered. Top it off with some nutritional yeast or fresh herbs if you have them!
