Here’s a super easy meal for your lazy (or busy?) whatever you like to call it self.
What goes in:
1 16 oz. Bag Of Brussels Sprouts
Around 10 small potatoes (I used the medley bag from TJ’s)
Seasoning: Black Pepper, Basil, Oregano, Paprika
What you do:
Preheat the oven to 375. Chop the potatoes into cubes and place evenly on a baking sheet with the entire bag of brussels sprouts. Drizzle some olive oil over and season. Pop in the oven for about 30-40 minutes. Now you have 30-40 min to take your cut your nails, change your polish, watch an entire TV show, pretty much anything because this meal requires almost nothing from you.
Okay, back to the oven. You know its done when the potatoes are soft. Broil for 3-5 minutes at the end for some extra crunch if you like. Serve with a little splash of balsamic vinaigrette and top it off with sunflower seeds, goat cheese, dried cranberries, and whatever else! This made enough for a light dinner and lunch for the rest of the week.
