Thai Coconut Noodle Soup

If you are in need of a warm and comforting meal, but you only want to put 15 minutes towards it: this is for you!

What goes in:

1 Can of Coconut Milk

1 Box of Vegetable Broth

1/4 Red Onion, chopped

1 Jalapeno, chopped

A Couple  Handfuls of Broccoli

1 Package of Firm Tofu

Ginger, grated


3 Tbsp. Red Thai Curry Paste

1 Lime

1 Package Brown Rice Vermicelli Noodles

1 Cup of Water


Olive Oil

What you do: 

Put chopped broccoli, jalapeno, red onion, red Thai curry paste, and garlic in a large pot with some olive oil on medium heat. Grate as much ginger as you like and then put the lid on. While this is cooking, cube your tofu. After about 5 minutes or so, add the tofu, coconut milk, water, and vegetable broth. Once this comes to a boil add vermicelli noodles and cook until noodle are soft. Squeeze half a lime and top off with cilantro and more grated ginger or salt to your liking.
