Packin’ Bowls

Rice bowls are my go to meal for dinner. They are easy, filling, and you can put anything in them. These are the ingredients and directions for the bowl I ate tonight, but you can easily add/sub in anything you want.  

What’s in it:

Trader Joes Brown Rice Medley

Great Northern Beans

Handful of Arugula

Chopped Cauliflower

Chopped Broccoli

1 Red Bell Pepper

1 Jalapeno

1 Sweet Potato

Spices: Turmeric, Ground Cumin, Black Pepper, Paprika, Garlic Olive Oil

Topped off with: Sunflower Seeds & Olive Hummus

Getting Started: 

I start by cooking the rice on the stove since that takes the longest. While the rice is cooking, chop your sweet potato into even sized cubes. Put cubes on a baking sheet and drizzle with olive oil. I used Garlic Oil, but you can use anything (coconut oil, regular olive oil, etc.). Season the sweet potato cubes with your choice of spices and put in the oven at 375 for about 15 minutes. Chop your other veggies. Try to chop them in a similar size so they all cook at the same speed.

Once the sweet potatoes have been in the the oven for 15 min or so, add the other veggies. Drizzle some more oil over so all the veggies get some and add more of the spices so all the veggies get some love.

Put the veggies back in the oven for another 15-20 minutes. Once they are cooked I like to broil them for 3-4 minutes. Now put your bowl together! I started with rice and piled on some arugula. Warmed up some beans and threw them on top along with the veggies. To finish it off I sprinkled some sunflower seeds and a hearty spoonful of olive hummus.
